

I had this kale salad for lunch today, and it´s a fantastic way to get your greens in!
It´s nutritious, filling, and is a great plant-based meal to have for either your lunch or dinner.
Fun fact, I´m not the biggest fan of salads, but this one was really tasty and was so easy to whip up.
Kale Salad Recipe:
I mixed together kale, sprouts, avocado, baked sweet potatoes, and chickpeas. Then topped with a dressing that I am currently working on. YUM.
You can substitute the sweet potatoes with butternut squash or tofu if you wish.
